Training of Anjouan distillers
SHARING SKILLS - RESPECTING TRADITIONS
HONOR OF THE COMOROS
Supported by the French Embassy - PISCCA Project 2021-2022
It is essential for distillers to master and optimize their distillation processes, as well as their business management. However, with empirical and traditional distillation techniques, Anjouanese distillers are not always able to adapt to the current market needs.
That is why The Distillerie de Saloi, with the strength of its experience in the production of quality essential oils and in the adaptation of its products to the requirements of the international market, offers to pass on its skills to enable Anjouanese distillers to improve the quality of their product and enhance its value.
The future of the Ylang sector in the Comoros
Distillation is an ancestral art that requires a sharp mastery of processes and constant vigilance.
In the Comoros, the majority of distillers are small entrepreneurs who have passed on their know-how over several generations. This training is intended for them and aims to resume in a clear and precise manner good distillation practices in order to optimize their performance, save their fuel (wood or oil) and improve the quality of their oils.
Objectifs
This training also aims to protect our activity in the Comoros and to develop it in the best conditions.
It becomes necessary to focus on quality, to professionalize and to improve the image of the Ylang sector of the Comoros.
Indeed, this image is in danger because of adulteration practices that have been rampant for years and are destroying our reputation. A general mobilization becomes essential and the first ramparts against these dishonest practices are the distillers themselves who must guarantee the quality of the oils they put into the circuit.
Main-d’œuvre locale a MOYA ANJOUAN

Training
The training we have put in place for the year 2021/2022 allows distillers to better understand the distillation processes: quantity of water, distillation time, management of fire and heating, fractionation, management of degrees, yields , etc...
Distillers and their technicians come to the Distillerie de Saloi every two weeks for a full day of training during which we also remind them that it is essential to distill in well-maintained, clean and functional equipment.
At the end of the project, more than 300 professionals in the sector (distillers and technicians) shall be trained.
The distillerie de Saloi got in touch with the Ylang-Ylang industry inter-branch, the GIE Ndzouan Ylang as well as the NGO Initiative Développement with their FYDECO project to discuss the needs of distillers. Furthermore, the fact that we are in direct contact with many distillers has enabled us to identify their difficulties.
Objectives of this training
-
Improve the performance of distillers,
-
Save the island's resources (cooking techniques and homes habits using less wood, recycling water, creating compost, etc.),
-
Fight adulteration techniques,
-
Create a map of the Ylang sector in Anjouan (number of stills, capacities, hearths improved or not).
Agroforestry - Cultivation of firewood
SUSTAINABLE DEVELOPMENT - SAVING THE COMORIAN FOREST
This year, we are setting up this project with one of our main customers, whose medium-term objective is to make the supply of wood a sustainable resource.
For this we will plant fast-growing trees on dedicated plots to harvest this wood which will be used to heat our stills for distillation. Thus the wood will no longer come from the forest but from our "wood yards".
Our goal is also to promote this method of growing firewood among Comorians in order to reduce the destruction of the endemic forest.
Solutions
-
Grow trees that can be pruned after 6 years;
-
Propose a system of down payment on wood such as the rental of plots which will be reforested every 6 years;
-
Identify potential landowners;
-
Establish rental contracts;
Complementary actions:
-
Encourage operators to hedge the plots with fast-growing bushes and trees in order to harvest the kindling;
-
Promote fruit trees
Objectives of this project
-
Raising public awareness of the deforestation matter
-
Stop wild tree cutting
-
Create jobs and income for plot owners
